Ingredients
  

For the Gnocchi
  • 1 package Gnocchi Use store-bought for ease.
  • 2 tablespoons Olive Oil Essential for crispy finish.
For the Filling
  • 4 cups Fresh Spinach Kale can be a substitute.
  • 1 cup Feta Cheese Goat cheese works well too.
For Seasoning
  • 2 cloves Garlic Fresh minced enhances flavor.
  • to taste Salt Enhances all flavors.
  • to taste Black Pepper Freshly ground is best.
  • to taste Red Pepper Flakes Optional for heat.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Cook the gnocchi according to package instructions, about 2-3 minutes, until they float. Remove with a slotted spoon and set aside.
  2. Heat 2 tablespoons of olive oil in a frying pan over medium-high heat. Add the gnocchi in a single layer and cook undisturbed for 2-3 minutes until golden-brown.
  3. Gently stir the gnocchi, flipping them to brown all sides for another 2-3 minutes until crispy and golden.
  4. Add 2 cloves of minced garlic to the pan and sauté for about 1 minute until fragrant.
  5. Heap in 4 cups of fresh spinach and toss gently until wilted, about 2-3 minutes.
  6. Season with salt, black pepper, and optional red pepper flakes. Toss to coat the gnocchi and spinach.
  7. Remove from heat and crumble in the feta cheese. Stir gently to combine and serve immediately.

Notes
