Cooking Instructions
- Bring a large pot of salted water to a rolling boil. Cook the gnocchi according to package instructions, about 2-3 minutes, until they float. Remove with a slotted spoon and set aside.
- Heat 2 tablespoons of olive oil in a frying pan over medium-high heat. Add the gnocchi in a single layer and cook undisturbed for 2-3 minutes until golden-brown.
- Gently stir the gnocchi, flipping them to brown all sides for another 2-3 minutes until crispy and golden.
- Add 2 cloves of minced garlic to the pan and sauté for about 1 minute until fragrant.
- Heap in 4 cups of fresh spinach and toss gently until wilted, about 2-3 minutes.
- Season with salt, black pepper, and optional red pepper flakes. Toss to coat the gnocchi and spinach.
- Remove from heat and crumble in the feta cheese. Stir gently to combine and serve immediately.
