  • 4 medium Roasting Potatoes King Edward or Yukon Gold are ideal
  • 3 tbsp Olive Oil For drizzling

  • 150 g Feta Cheese Crumbled
  • 2 cloves Garlic Sliced
  • 1 small Red Onion Thinly sliced
  • 2 tbsp Capers
  • 2 sprigs Rosemary Torn
  • 1 whole Lemon Quartered

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F). Rinse the roasting potatoes thoroughly and pierce them a few times with a knife. Place in a microwaveable bowl and cover with damp paper towels.
  2. Cook the potatoes in the microwave on high for 7 to 12 minutes until easily pierced but firm.
  3. Transfer the softened potatoes to a baking tray and gently smash each one with a potato masher.
  4. Drizzle with olive oil and sprinkle with salt and pepper. Scatter the sliced garlic, torn rosemary, and nestle lemon wedges around the potatoes.
  5. Roast the potatoes in the oven for about 10 minutes until golden brown and crispy around the edges.
  6. Add crumbled feta, red onion rings, and capers on top, and return to the oven for an additional 5 minutes.
  7. Squeeze fresh lemon juice over the potatoes before serving hot.
