Step-by-Step Instructions
  1. In a large mixing bowl, combine your leftover mashed potatoes, grated cheddar cheese, chopped scallions, parsley, large egg, onion powder, and a pinch of cayenne pepper. Mix thoroughly until well incorporated.
  2. Using about ¼ cup of the mixture for each pancake, shape them into thick patties and coat in panko breadcrumbs.
  3. Heat a generous amount of avocado oil in a cast-iron skillet over medium heat until shimmering, about 2–3 minutes.
  4. Carefully place the patties in the hot skillet, frying for about 2-3 minutes on each side until golden brown.
  5. Remove from skillet and place on a paper towel-lined plate. Serve warm with a dollop of sour cream.
