Step-by-Step Instructions

  2. Wash and quarter the baby gold potatoes. Place them in a pot and cover with cold water. Boil and then simmer for 10-12 minutes.
  3. Drain the potatoes and let them sit in the colander for about 5 minutes to steam off excess water.
  4. Sprinkle the drained potatoes with salt and pepper, and shake the colander to roughen their surfaces.
  5. Pour avocado oil onto a baking sheet and heat it in the oven for about 10 minutes.
  6. Add the seasoned potatoes to the hot baking sheet, cut-side down, and roast for about 30 minutes.
  7. Check for crispiness and sprinkle with sea salt flakes before serving.
