- Preheat the oven to 200°C (390°F) for conventional or 180°C (360°F) for a fan setting.
- Thoroughly wash and scrub 750g of small potatoes, cut each in half.
- In a mixing bowl, combine the halved potatoes with melted salted butter, grated Parmesan cheese, oregano, garlic powder, onion powder, salt, and black pepper. Stir until evenly coated.
- Line a baking sheet with parchment paper and arrange the coated potato halves cut-side down with space between each piece.
- Bake for 20 to 25 minutes until soft inside and golden brown on the edges.
- Remove from the oven, flip each potato half cut-side up, and return to the oven for an additional 15 to 20 minutes until crispy.
- Allow to rest for a few minutes before serving hot.
