Method
 

Preparation
  1. Pat the whole chicken dry with paper towels to remove excess moisture.
  2. In a large bowl, combine low-sodium soy sauce, hoisin sauce, freshly grated ginger, five spice powder, honey, and dark brown sugar.
  3. Carefully coat the chicken with the marinade, covering every crevice.
  4. Heat canola oil in a large pot over medium heat; brown the marinated chicken on all sides for about 8-10 minutes.
  5. Preheat oven to 375°F and transfer the chicken to bake for approximately 1 hour until internal temperature reaches 165°F.
  6. Let the chicken rest for about 10 minutes before serving.
  7. Slice the rested chicken and place on warm tortillas; top with fresh cucumber and scallions.
