Cooking Steps
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Wash and dice the russet potatoes into bite-sized pieces. In a large bowl, coat with oil and season with salt, pepper, garlic powder, and onion powder. Toss well.
- Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 18–20 minutes, shaking the basket 2-3 times for even cooking.
- While the potatoes cook, heat a skillet over medium-high heat and add ground beef. Cook until browned, about 5-7 minutes. Drain excess grease.
- Add taco seasoning and water to the browned beef. Stir and simmer for 3-5 minutes until thickened.
- Once potatoes are cooked, layer them on a serving dish and spoon the seasoned beef over the top.
- Sprinkle Mexican shredded cheese over the beef while it's still hot to melt the cheese.
- Add your favorite toppings such as pico de gallo and guacamole before serving.
