Ingredients
  

For the Potatoes
  • 4 medium Russet Potatoes can substitute with red or sweet potatoes
  • 2 tablespoons Oil any cooking oil works well
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Pepper freshly ground enhances flavor
  • 1 teaspoon Garlic Powder or use fresh minced garlic
  • 1 teaspoon Onion Powder or use fresh sautéed onions
For the Filling
  • 1 pound Ground Beef can substitute with ground turkey or plant-based crumbles
  • 1 packet Taco Seasoning or use homemade seasoning
  • 1/2 cup Water as per seasoning instructions
For the Toppings
  • 1 cup Mexican Shredded Cheese can substitute with cheddar or mozzarella
  • Optional Toppings pico de gallo, guacamole, sour cream, etc.

Method
 

Cooking Steps
  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Wash and dice the russet potatoes into bite-sized pieces. In a large bowl, coat with oil and season with salt, pepper, garlic powder, and onion powder. Toss well.
  3. Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 18–20 minutes, shaking the basket 2-3 times for even cooking.
  4. While the potatoes cook, heat a skillet over medium-high heat and add ground beef. Cook until browned, about 5-7 minutes. Drain excess grease.
  5. Add taco seasoning and water to the browned beef. Stir and simmer for 3-5 minutes until thickened.
  6. Once potatoes are cooked, layer them on a serving dish and spoon the seasoned beef over the top.
  7. Sprinkle Mexican shredded cheese over the beef while it's still hot to melt the cheese.
  8. Add your favorite toppings such as pico de gallo and guacamole before serving.
