  • 2 pounds Beef stew meat cut into 1-inch cubes
  • 6 cups Beef broth homemade or low-sodium
  • 2 tablespoons Tomato paste
For the Veggies
  • 2 cups Carrots chopped
  • 1 cup Celery chopped
  • 1 cup Onions finely chopped
  • 3 cloves Garlic minced
For the Barley
  • 1 cup Barley hulled preferred
Seasoning and Herbs
  • 1 teaspoon Thyme fresh or dried
  • 2 leaves Bay leaves
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Cut the beef into 1-inch cubes and season generously with salt and pepper.
  2. Dice the carrots, celery, and onions, and mince the garlic.
Cooking
  1. Rinse the barley under cold water to remove excess starch.
  2. Optional: Sear the beef in a skillet for 3-4 minutes until browned.
  3. In the crockpot, layer the beef, vegetables, rinsed barley, and seasonings.
  4. Pour in the beef broth and add tomato paste, thyme, and bay leaves.
  5. Cover and set the crockpot on low for 6-8 hours or high for 4-5 hours.
  6. Taste and adjust seasoning before serving; remove bay leaves.
