- Begin by heating a skillet over medium heat. Add the Italian sausage, breaking it apart with a spatula, and cook for about 5–7 minutes or until well-browned and fully cooked.
- Transfer the browned sausage into your crockpot. Pour in the marinara sauce and sprinkle the frozen cheese tortellini over the top. Stir gently to mix.
- Cover the crockpot and set it to cook on low for 4–5 hours or on high for 2–3 hours until tortellini is tender.
- In the last 30 minutes, lift the lid and stir in the mozzarella and Parmesan cheese. Replace the lid and continue cooking until cheese melts.
- Once cooking time is up, taste and adjust seasoning if needed. Serve warm, garnished with fresh parsley.
