Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, beat together the softened unsalted butter and granulated sugar until fluffy and pale.
  3. Add eggs and the extracts, mixing until smooth. Gradually sift in flour and baking powder until a dough forms.
  4. Roll the dough into balls about the size of golf balls and flatten each slightly before placing them on the sheet.
  5. Bake for 9–11 minutes until edges are set but centers appear underbaked. Cool on the baking sheet for 5 minutes before transferring to a rack.
  6. For the frosting, beat together butter and powdered sugar until smooth, then add cream or milk until desired consistency.
  7. Mix in almond extract and frost cooled cookies, adding food coloring if desired. Allow to set before serving or storing.
