- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, beat together the softened unsalted butter and granulated sugar until fluffy and pale.
- Add eggs and the extracts, mixing until smooth. Gradually sift in flour and baking powder until a dough forms.
- Roll the dough into balls about the size of golf balls and flatten each slightly before placing them on the sheet.
- Bake for 9–11 minutes until edges are set but centers appear underbaked. Cool on the baking sheet for 5 minutes before transferring to a rack.
- For the frosting, beat together butter and powdered sugar until smooth, then add cream or milk until desired consistency.
- Mix in almond extract and frost cooled cookies, adding food coloring if desired. Allow to set before serving or storing.
