- Wash and dry the broccoli. Chop it into bite-sized florets and core and dice the Honeycrisp apple. Finely chop the red onion. Place all in a large mixing bowl.
- In the same bowl, add the broccoli, apple, and red onion. Toss in the sunflower seeds and dried cranberries, mixing gently.
- In a separate bowl, whisk together Greek yogurt (or mayonnaise), honey (or maple syrup), apple cider vinegar, salt, and pepper until smooth.
- Pour dressing over the salad and gently toss until evenly coated.
- Cover and refrigerate for at least 30 minutes before serving. Toss again before serving.
