  • 1 medium Red Onion or substitute with green onions or shallots
  • 1/2 cup Sunflower Seeds or almond/walnut substitutes
  • 1/2 cup Dried Cranberries or raisins/chopped dates
For the Dressing
  • 1 cup Greek Yogurt or mayonnaise; low-fat or vegan yogurt for lighter option
  • 2 tablespoons Honey or maple syrup; agave syrup is a vegan alternative
  • 2 tablespoons Apple Cider Vinegar or white wine vinegar/lemon juice
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Wash and dry the broccoli. Chop it into bite-sized florets and core and dice the Honeycrisp apple. Finely chop the red onion. Place all in a large mixing bowl.
  2. In the same bowl, add the broccoli, apple, and red onion. Toss in the sunflower seeds and dried cranberries, mixing gently.
  3. In a separate bowl, whisk together Greek yogurt (or mayonnaise), honey (or maple syrup), apple cider vinegar, salt, and pepper until smooth.
  4. Pour dressing over the salad and gently toss until evenly coated.
  5. Cover and refrigerate for at least 30 minutes before serving. Toss again before serving.
