Baking Steps
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with butter or cooking spray.
- In a medium mixing bowl, whisk together all-purpose flour, cocoa powder, baking soda, kosher salt, and espresso powder.
- In a large bowl, combine olive oil, brown sugar, and granulated sugar. Mix smooth, then add eggs one at a time. Follow with vanilla extract, sour cream, and mashed bananas.
- Gradually add the dry mixture to the wet ingredients, mixing gently until just combined.
- Dust dark chocolate chips with a bit of flour before folding them into the batter, reserving some for topping.
- Pour the batter into the loaf pan and sprinkle with reserved chocolate chips and optional banana slices.
- Bake for 55-65 minutes, checking doneness by inserting a toothpick into the center.
- Remove from oven and cool in the pan for about 20 minutes before transferring to a wire rack to cool completely.
