- Preheat the oven to 375°F (190°C) and prepare your muffin tin with liners or grease.
- In a large bowl, whisk together the flour, protein powder, cocoa powder, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix together the egg, milk, applesauce or banana, melted oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently fold until just mixed.
- If using chocolate chips, fold them into the batter.
- Fill each muffin cup about two-thirds full and bake for 18 to 22 minutes.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
