Method
 

Step-by-Step Instructions
  1. Preheat your oven to 160°C (320°F) with a fan or 170°C (338°F) for conventional settings.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water.
  3. In a separate bowl, whip the eggs, caster sugar, and demerara sugar until thick and fluffy.
  4. Sift together the plain flour, cocoa powder, baking powder, and salt in another bowl.
  5. Fold the melted chocolate mixture into the whipped egg mixture and then gradually add the dry ingredients.
  6. Scoop dollops of the batter onto the prepared baking tray.
  7. Bake for 12-14 minutes until edges are set and tops crackled.
  8. Cool on the tray for 10 minutes before transferring to a wire rack.
