- Melt the dark chocolate and butter together in a heatproof bowl over simmering water.
- In a separate bowl, whip the eggs, caster sugar, and demerara sugar until thick and fluffy.
- Sift together the plain flour, cocoa powder, baking powder, and salt in another bowl.
- Fold the melted chocolate mixture into the whipped egg mixture and then gradually add the dry ingredients.
- Scoop dollops of the batter onto the prepared baking tray.
