Ingredients
  

For the Crust
  • 1 cup walnuts finely chopped
  • 1 cup graham cracker crumbs gluten-free if needed
  • 1/3 cup light brown sugar dark brown sugar can be used for deeper flavor
  • 1/4 teaspoon salt preferably kosher salt
  • 6 tablespoons unsalted butter melted and slightly cooled
For the Filling
  • 16 ounces full-fat cream cheese room temperature
  • 1 cup full-fat sour cream room temperature
  • 1 cup granulated sugar no substitutions
  • 2 teaspoons vanilla extract high-quality recommended
  • 3 large eggs room temperature
  • 2 large egg yolks room temperature
  • 1 cup high-quality maple syrup real maple syrup for best taste
  • 1 teaspoon maple extract optional
  • 1/2 cup heavy cream room temperature
  • 1/4 cup all-purpose flour sifted
For the Topping
  • 4 tablespoons unsalted butter melted
  • 1/2 cup light brown sugar fresh
  • 1/4 cup heavy cream room temperature
  • 1/4 teaspoon salt a pinch
  • 1 1/2 cups walnuts lightly toasted
  • 1 teaspoon vanilla extract best quality
  • 1/4 cup high-quality maple syrup a must-have
  • 2 tablespoons bourbon optional

Method
 

Crust Preparation
  1. Preheat your oven to 350°F (175°C). Wrap the bottom of a 9-inch springform pan tightly in aluminum foil to prevent leaks.
  2. In a food processor, blend 1 cup of walnuts until finely chopped. Mix with the other crust ingredients and press into the pan.
  3. Bake for 10 minutes until lightly golden.
Filling Preparation
  1. Lower oven temperature to 325°F (160°C). Blend cream cheese and sour cream until smooth.
  2. Incorporate sugar and vanilla extract, scraping sides. Add eggs and yolks one at a time, followed by syrup, maple extract, and heavy cream.
  3. Mix until smooth.
Bake the Cheesecake
  1. Pour filling into cooled crust. Place pan in a larger baking dish with hot water.
  2. Bake for 1 hour and 20 minutes. Turn off oven and leave cheesecake inside for 30 minutes.
Chill the Cheesecake
  1. Cool at room temperature for 1 hour, then refrigerate for at least 6 hours or overnight.
Topping Preparation
  1. Melt butter in a skillet over medium heat. Stir in brown sugar until bubbling.
  2. Gradually add cream and salt, mixing to create a smooth sauce.
  3. Stir in walnuts, vanilla extract, and maple syrup, then remove from heat.
Finishing Touch
  1. Pour cooled topping over chilled cheesecake and let set for a few minutes. Serve with whipped cream.
