Making the Rolls
- Warm the milk to about 110°F, stir in the yeast and let it bloom for 10 minutes.
- In a large bowl, sift flour, cocoa powder, sugar, and salt. Cut in the butter until coarse crumbs form.
- In a stand mixer, combine the yeast mixture, eggs, and dye with dry ingredients and mix until smooth.
- Let the dough rise in a warm oven for 1 hour until doubled in size.
- Prepare the cinnamon filling by mixing butter, brown sugar, and cinnamon until smooth.
- Roll out the dough into a rectangle and spread cinnamon filling over it. Roll into a tight log.
- Slice the log into 12 rolls using dental floss and place in a greased pan. Let rise for 20 minutes.
- Preheat oven to 375°F, pour heavy cream around the rolls and bake for 25-27 minutes.
- Prepare the icing by blending cream cheese and butter, then gradually mix in sugar, vanilla, and milk.
- Spread icing over warm rolls and enjoy!
