Dough Ingredients
  • 1 cup Milk Warm to about 110°F
  • 2 teaspoons Active Dry Yeast Check freshness
  • 2 Large Eggs Room temperature
  • 1 tablespoon Red Gel Food Dye Avoid liquid dye
  • 4 cups All-Purpose Flour Spoon and level
  • 1 cup Unsweetened Cocoa Powder
  • 1 teaspoon Salt
  • 1 cup White Granulated Sugar
  • 1/2 cup Unsalted Butter Room temperature
Filling Ingredients
  • 1/2 cup Brown Sugar Packed
  • 2 tablespoons Ground Cinnamon
Baking Ingredients
  • 1/2 cup Heavy Cream Pour around rolls before baking
Icing Ingredients
  • 8 oz Cream Cheese Soft for easier mixing
  • 2 cups Powdered Sugar Sift to avoid lumps
  • 1 teaspoon Pure Vanilla Extract
  • 2 tablespoons Additional Milk Adjust for desired icing consistency

Method
 

Making the Rolls
  1. Warm the milk to about 110°F, stir in the yeast and let it bloom for 10 minutes.
  2. In a large bowl, sift flour, cocoa powder, sugar, and salt. Cut in the butter until coarse crumbs form.
  3. In a stand mixer, combine the yeast mixture, eggs, and dye with dry ingredients and mix until smooth.
  4. Let the dough rise in a warm oven for 1 hour until doubled in size.
  5. Prepare the cinnamon filling by mixing butter, brown sugar, and cinnamon until smooth.
  6. Roll out the dough into a rectangle and spread cinnamon filling over it. Roll into a tight log.
  7. Slice the log into 12 rolls using dental floss and place in a greased pan. Let rise for 20 minutes.
  8. Preheat oven to 375°F, pour heavy cream around the rolls and bake for 25-27 minutes.
  9. Prepare the icing by blending cream cheese and butter, then gradually mix in sugar, vanilla, and milk.
  10. Spread icing over warm rolls and enjoy!
