- Cut a ripe watermelon in half and slice off the rind. Chop the flesh into about 1-inch cubes.
- Fill the Ninja Creami pint container with watermelon cubes, packing them gently to the max fill line.
- Pour coconut water into the pint container, filling it to the same max fill line where the watermelon is.
- Place the lid on the container and freeze overnight for at least 12 to 24 hours.
- Remove the container from the freezer and microwave for 30 seconds to soften.
- Blend in the Ninja Creami on the sorbet setting; re-spin if needed for a smoother texture.
- Serve in bowls or cones, garnished with fresh mint leaves if desired.
