  2. Wash the ripe Fuyu persimmons thoroughly and cut each in half horizontally.
  3. Arrange the halved persimmons cut-side up in a baking dish.
  4. In a bowl, whisk together apple juice, melted coconut oil, and hot water; add cardamom, ground ginger, and optional nutmeg.
  5. Pour the syrup over the arranged persimmons, making sure each half is generously coated.
  6. Drizzle honey or maple syrup over the persimmons.
  7. Cover with aluminum foil and bake for about 45-50 minutes, checking for doneness after 30 minutes.
