Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and nutmeg.
  3. In another bowl, whisk together the Greek yogurt, milk, eggs, sourdough discard, melted butter, and vanilla extract.
  4. Gently mix the wet mixture into the dry ingredients until just combined.
  5. Grease your donut pans generously with coconut oil or cooking spray.
  6. Spoon the batter into the prepared donut pans, filling each about ¾ full.
  7. Bake for 14-16 minutes or until golden brown and a toothpick comes out clean.
  8. Allow the donuts to cool in the pan for about 5 minutes before transferring to a wire rack.
  9. While warm, place in a bag with powdered sugar and shake to coat.
