Step-by-Step Instructions
  1. In a medium bowl, mix 1 1/2 cups of all-purpose flour, 1 tablespoon of baking powder, 2 tablespoons of brown sugar, and 1 teaspoon of kosher salt. In another bowl, whisk together 3/4 cup of whole milk, 1/2 cup of sour cream, 2 large eggs, and 1 teaspoon of vanilla extract until smooth. Gently combine the wet ingredients into the dry ingredients until just mixed.
  2. Take 3 ripe bananas and cut them in half lengthwise, then slice each half into quarters.
  3. In a non-stick skillet or air fryer, melt 1 tablespoon of butter over medium heat.
  4. Take each banana piece and dip it into the pancake batter, ensuring it's thoroughly coated on all sides.
  5. Carefully place the coated banana pieces into the hot skillet. Cook them for about 3-5 minutes on each side, or until they are golden brown and puffed up.
