Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and line a rectangular baking dish (20x30 cm) with parchment paper.
  2. Pulse the butter cookies into fine crumbs and combine them with melted butter in a mixing bowl. Press firmly into the bottom of the baking dish.
  3. Combine blackcurrants with 50 grams of sugar and let sit for 10 minutes to release juices.
  4. Beat together cream cheese, remaining sugar, eggs, vanilla extract, baking powder, and salt until smooth.
  5. Fold in chopped pistachios into the cream cheese filling.
  6. Spread the blackcurrant mixture over the crust, then pour the cream cheese filling on top.
  7. Bake for 30-35 minutes until the top is golden-brown and the filling is set.
  8. Let cool completely before slicing into squares.
