- Preheat your oven to 180°C (350°F) and line a rectangular baking dish (20x30 cm) with parchment paper.
- Pulse the butter cookies into fine crumbs and combine them with melted butter in a mixing bowl. Press firmly into the bottom of the baking dish.
- Combine blackcurrants with 50 grams of sugar and let sit for 10 minutes to release juices.
- Beat together cream cheese, remaining sugar, eggs, vanilla extract, baking powder, and salt until smooth.
- Fold in chopped pistachios into the cream cheese filling.
- Spread the blackcurrant mixture over the crust, then pour the cream cheese filling on top.
- Bake for 30-35 minutes until the top is golden-brown and the filling is set.
- Let cool completely before slicing into squares.
