- Preheat your oven to 350°F (180°C) and line your baking sheets with silicone mats or parchment paper.
- In a large mixing bowl, combine 1 cup of room temperature unsalted butter and ¾ cup of granulated sugar. Beat on medium speed for about 3-4 minutes until light and fluffy.
- Mix in 1 large egg, 1 teaspoon vanilla extract, and 1 teaspoon almond extract until fully incorporated.
- Gradually sift in 2 ¼ cups of all-purpose flour and ½ teaspoon of salt, mixing on low speed until just combined.
- Optionally, divide the dough and incorporate red or green gel icing color into each section.
- Fill your cookie press with the prepared dough and press out shapes onto the lined baking sheets, spacing them about 1 inch apart.
- Decorate with colorful sprinkles or additional gel icing if desired.
- Bake for 5-8 minutes, watching closely for light golden edges.
- Allow cookies to cool on the sheets for about 4-5 minutes before transferring to a wire rack.
