Method
 

Step-by-Step Instructions
  1. In a high-speed blender, combine cottage cheese and eggs. Blend for 20–30 seconds until smooth.
  2. Heat a nonstick skillet over low to medium-low heat for about 2 minutes. Lightly grease the skillet.
  3. Pour approximately 1/3 cup of the batter into the center and tilt the pan to spread evenly.
  4. Cook for 3–5 minutes until edges lift, then flip and cook for another 1–2 minutes until golden.
  5. Transfer to a plate and cool for 2–3 minutes before filling.
  6. For an oven method, spread the remaining batter on a parchment-lined baking sheet and bake at 350°F for 18–20 minutes.
