- In a high-speed blender, combine cottage cheese and eggs. Blend for 20–30 seconds until smooth.
- Heat a nonstick skillet over low to medium-low heat for about 2 minutes. Lightly grease the skillet.
- Pour approximately 1/3 cup of the batter into the center and tilt the pan to spread evenly.
- Cook for 3–5 minutes until edges lift, then flip and cook for another 1–2 minutes until golden.
- Transfer to a plate and cool for 2–3 minutes before filling.
