- In a small bowl, mix together 5 tablespoons of melted unsalted butter, 1 teaspoon of minced garlic, and 1/4 teaspoon of salt. Stir until fully combined and set aside.
- In a large mixing bowl, combine 16 ounces of cream cheese, 1/2 cup of shredded mozzarella, and 1/2 cup of sharp white cheddar. Add 1/4 cup of mayonnaise, 1/4 cup of minced shallot, 1 tablespoon of fresh parsley, 1 tablespoon of chives, 1 teaspoon of Worcestershire sauce, 1 teaspoon of minced garlic, 1 teaspoon of Old Bay seasoning, and 1 teaspoon of pepper. Gently fold in crab meat until just combined.
- Make 4-5 shallow cuts along the top of each croissant without cutting all the way through. Fill each croissant with the crab dip mixture, making sure it overflows slightly.
- Preheat your oven to 350°F (175°C). Place the stuffed croissants on a parchment-lined baking sheet and brush with garlic butter. Bake for 10-12 minutes until golden brown and heated through.
- Brush the remaining garlic butter over the croissants and sprinkle additional minced chives on top before serving. Serve warm.
