Method
 

Step-by-Step Instructions
  1. Bring a large pot of water to a boil over high heat. Wash and slice medium-sized potatoes into ¼ inch thick rounds.
  2. Add rock salt to the boiling water and carefully add potato slices. Boil for 3 minutes until slightly tender.
  3. Drain potatoes in a colander and let cool. Toss potato slices with yogurt until coated.
  4. Heat oil in a large frying pan over medium-high heat until shimmering.
  5. Remove coated potato slices and dip each into chicken breading mix. Fry in oil for 2-3 minutes on each side until golden brown.
  6. Remove fried Mojo Potatoes from oil and transfer to a plate lined with paper towels. Serve immediately.
