Filling
  • 1 cup lemon-lime soda opt for diet soda for lower sugar
  • 2 tablespoons cornstarch thickener for filling
  • 1 package strawberry gelatin use sugar-free for a lighter option
  • 4 cups fresh strawberries ripe and sweet, hulled and halved
Crust
  • 1 prepared pie crust store-bought regular or graham cracker crust

Method
 

Preparation
  1. Combine lemon-lime soda and cornstarch in a medium saucepan over medium heat. Stir until thickened, about 3 minutes.
  2. Remove from heat and whisk in the strawberry gelatin until fully dissolved. Allow to cool for 10-15 minutes.
  3. Wash, hull, and halve the strawberries, then place in a large mixing bowl.
  4. Gently fold the cooled gelatin mixture into the strawberries, ensuring all berries are coated.
  5. Pour the strawberry filling into the prepared pie crust and spread evenly.
  6. Chill the filled pie in the refrigerator for at least 3 hours to set.
  7. Once set, slice and serve chilled, optionally garnished with whipped cream.
