Ingredients
  

For the Croutons
  • 4 cups White Country Bread or ciabatta, sourdough
  • 3 tablespoons Extra-Virgin Olive Oil best quality
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper optional
For the Salad
  • 4 cups Ripe Tomatoes heirloom or vine-ripened
  • 1/4 cup Red Wine Vinegar or balsamic vinegar
  • 1 tablespoon Dijon Mustard or yellow mustard
  • 1 medium Shallot or Red Onion green onion as milder alternative
  • 1/4 cup Fresh Basil Leaves or parsley or mint

Method
 

Prepare Croutons
  1. Preheat oven to 400°F (200°C). Tear bread into 1-inch pieces, spread on baking sheet, drizzle with olive oil, sprinkle with salt and pepper, toss, and bake for about 15 minutes until golden brown.
Prep Tomatoes
  1. Slice tomatoes into wedges, place in strainer over a bowl, sprinkle with salt, and drain for about 15 minutes.
Make Vinaigrette
  1. Combine collected tomato juices, vinegar, and mustard in a bowl. Whisk in olive oil until emulsified, then adjust seasoning.
Combine Ingredients
  1. In a large bowl, combine croutons and drained tomatoes. Pour vinaigrette over and toss, then layer with basil.
Rest and Serve
  1. Let salad rest for 15 minutes before serving, tossing every 5 minutes.
