- Preheat your oven to 200 °C (392 °F).
- Wash and halve the large potatoes lengthwise, then brush with olive oil.

- While potatoes bake, combine chopped dill, parsley, Greek yogurt, olive oil, lime juice, salt, and pepper in a bowl.
- Once baked, fluff the insides of the potatoes and serve with slices of cucumber.
