  • 1 pound Lean Ground Turkey 93% lean recommended
  • 2 cups Fresh Spinach Sautéed and moisture removed
  • 1 cup Feta Cheese Crumbled, can substitute goat cheese or ricotta
  • 1/2 cup Breadcrumbs Panko or gluten-free options available
  • 1 tablespoon Olive Oil Extra virgin preferred
  • 1 large Egg Binding agent
  • 1 teaspoon Oregano Plus salt, pepper, to taste

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper or aluminum foil.
  3. Heat one tablespoon of olive oil in a skillet over medium heat, add chopped spinach and sauté for about 2–3 minutes until wilted. Remove from heat and cool before squeezing out moisture.
  4. In a large mixing bowl, combine lean ground turkey, sautéed spinach, crumbled feta cheese, breadcrumbs, and egg. Add seasonings and mix gently until just combined.
  5. Form the mixture into meatballs about 1.5–2 inches in diameter and place on the lined baking sheet.
  6. Bake for 20–25 minutes or until golden brown and internal temperature reaches 165°F (74°C). Broil for an additional 2–3 minutes if desired.
  7. Let the meatballs cool slightly before serving with favorite sauce or side.
