Ingredients
  

For the Granola Base
  • 2 cups granola feel free to swap in gluten-free granola for a gluten-free option
  • 1/3 cup melted coconut oil substitute with melted butter or another oil if needed
  • 3 tablespoons honey for a vegan alternative, use maple syrup
  • 1/2 cup white chocolate chips omit for a dairy-free version or replace with dark chocolate
For the Yogurt Layers
  • 1 cup plain Greek yogurt can be replaced with plant-based yogurt for a dairy-free option
  • 1 cup vanilla Greek yogurt feel free to use your favorite flavored yogurt
  • 1 1/2 cups fresh strawberries frozen strawberries work as a substitute if fresh aren’t available
  • 1 tablespoon lemon juice fresh lime juice can be used as an alternative
  • 1 teaspoon vanilla extract swap with lemon extract for a refreshing touch

Method
 

Step-by-Step Instructions
  1. Blend 1½ cups of fresh strawberries with 1 tablespoon of honey and a squeeze of lemon juice in a blender until smooth. Set aside.
  2. In a mixing bowl, combine 1 cup of vanilla Greek yogurt with 1 tablespoon of honey and a splash of vanilla extract. In another bowl, fold in 1 cup of plain Greek yogurt into the prepared strawberry puree.
  3. Mix together granola, melted coconut oil, and remaining honey until combined. Incorporate melted white chocolate chips if using.
  4. Press the granola mixture into the bottom of popsicle molds, fill with the vanilla yogurt layer, tap to release air bubbles, and spoon in the strawberry yogurt mixture.
  5. Insert sticks into molds and freeze for at least 4 hours or overnight until solid.
  6. To unmold, run warm water over molds for a few seconds, then gently pull the sticks to release bars.
