- Blend 1½ cups of fresh strawberries with 1 tablespoon of honey and a squeeze of lemon juice in a blender until smooth. Set aside.
- In a mixing bowl, combine 1 cup of vanilla Greek yogurt with 1 tablespoon of honey and a splash of vanilla extract. In another bowl, fold in 1 cup of plain Greek yogurt into the prepared strawberry puree.
- Mix together granola, melted coconut oil, and remaining honey until combined. Incorporate melted white chocolate chips if using.
- Press the granola mixture into the bottom of popsicle molds, fill with the vanilla yogurt layer, tap to release air bubbles, and spoon in the strawberry yogurt mixture.
- Insert sticks into molds and freeze for at least 4 hours or overnight until solid.
- To unmold, run warm water over molds for a few seconds, then gently pull the sticks to release bars.
