  • 1 lb ground beef or chicken can substitute with ground turkey or plant-based option
  • 1 can black beans packed with protein and fiber
For the Vegetables
  • 1 cup diced bell pepper or paprika for crunch
  • 1 medium onion or shallots for milder flavor
  • 2 cloves garlic minced; or garlic powder
  • 1 cup corn fresh or frozen
For the Seasoning
  • 2 tablespoons taco seasoning store-bought or homemade
For Toppings
  • 1 cup shredded cheese or nutritional yeast for vegan option
  • 1/4 cup fresh cilantro or parsley
  • 2 limes lime wedges or lemon wedges

Method
 

Cooking Instructions
  1. In a medium pot, combine long-grain rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes.
  2. While rice is cooking, chop the vegetables: dice bell pepper and onion, mince garlic.
  3. In a large skillet, heat olive oil over medium heat. Add onions and garlic; sauté for 3-4 minutes until translucent.
  4. Add ground meat to the skillet, break apart, and cook for 5-7 minutes until browned.
  5. Stir in taco seasoning, diced bell pepper, and corn. Cook for an additional 3-4 minutes.
  6. Drain and rinse black beans; add to skillet and heat through for 2-3 minutes.
  7. To serve, scoop rice into bowls and top with the protein mixture. Garnish with cheese, cilantro, and lime wedges.
