For the Pop Tart Flavor
  • 8 pieces Pop Tarts divided by using 6 in the dough and 2 for topping
For the Icing (Optional)
  • 1 cup Powdered Sugar
  • 2 tablespoons Water or milk for creamier icing
  • Food Coloring & Sprinkles for decorative icing

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter and cream cheese in a stand mixer until smooth and creamy (about 2-3 minutes).
  3. Mix in sugar and corn syrup until the dough is light and fluffy (about 2-3 minutes).
  4. Add the egg and beat until fully incorporated (about 1 minute).
  5. Gradually add flour, baking soda, and salt, mixing on low speed until just combined.
  6. Fold in 6 coarsely chopped Pop Tarts into the dough gently.
  7. Using a cookie scoop, place rounded dough portions onto the baking sheet and flatten each slightly.
  8. Chop the remaining 2 Pop Tarts and press them into the tops of each cookie.
  9. Bake for 10-12 minutes or until golden brown around the edges.
  10. For optional icing, mix powdered sugar with water until pourable, then drizzle over cooled cookies.
