- Core and slice the medium apples, leave skin on for extra fiber. Place them in the slow cooker.
- Pour in apple cider vinegar or water. Add ground cinnamon, vanilla extract, ground cloves, ground nutmeg, and sea salt. Stir well to coat apples.
- Cover slow cooker and cook on low for 5-6 hours until apples are soft and caramelized.
- Use an immersion blender to puree the mixture until smooth. Alternatively, blend in batches in a standing blender.
- Return the apple butter to the slow cooker, switch to high heat, and cook uncovered for 1-2 hours until thickened.
- Allow the apple butter to cool at room temperature for about 30 minutes before storing in airtight containers.
