  2. In a medium mixing bowl, whisk together gluten-free flour blend, cornstarch, baking powder, and kosher salt. Set aside.
  3. In a measuring cup, combine milk, heavy cream, and vanilla extract, stirring gently. Set aside.
  4. Cream together softened butter and granulated sugar on medium speed until fluffy, about 3 to 4 minutes. Add eggs one at a time, mixing thoroughly.
  5. Gradually add the dry mixture and prepared milk mixture to the creamed butter, alternating between the two until just combined.
  6. Let the batter rest for 15 to 20 minutes to allow the gluten-free flour to hydrate.
  7. Pour the rested batter into the prepared cake pans and bake for 45 to 50 minutes. Check for doneness with a toothpick.
