Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (177°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large mixing bowl, beat together the softened unsalted butter and brown sugar until creamy. Add vanilla extract and mix. Stir in flour, baking powder, salt, and oats until crumbly.
  3. Press more than half of the crumbly mixture into the bottom of the prepared pan. Bake for 12 minutes until lightly golden.
  4. In a separate bowl, whisk together the sweetened condensed milk, lemon juice, and lemon zest until smooth.
  5. Pour the lemon filling over the baked crust, then sprinkle the remaining crumble mixture on top.
  6. Bake again for 22-25 minutes until topping is golden and center is slightly jiggly.
  7. Let the bars cool completely in the pan, then lift out and cut into pieces.
