Method
 

Preparation Steps
  1. In a mixing bowl, combine egg yolks and sugar. Beat until pale and fluffy, about 3–5 minutes.
  2. In a small bowl, mix powdered gelatin with 2 tablespoons of boiled water until dissolved.
  3. In a saucepan, bring milk and vanilla extract to a gentle boil over medium heat, about 5 minutes.
  4. Gradually pour the hot milk into the egg mixture while whisking to prevent scrambling.
  5. Return the mixture to the saucepan, whisk for 2–3 minutes until thickened.
  6. Remove from heat and stir in the dissolved gelatin until fully incorporated.
  7. Allow to cool for about 10 minutes, then fold in whipped heavy cream gently.
  8. Pour into molds or glasses and refrigerate for at least 6 hours or overnight.
  9. To serve, gently unmold and garnish with fresh berries.
