Preparation Steps
- In a mixing bowl, combine egg yolks and sugar. Beat until pale and fluffy, about 3–5 minutes.
- In a small bowl, mix powdered gelatin with 2 tablespoons of boiled water until dissolved.
- In a saucepan, bring milk and vanilla extract to a gentle boil over medium heat, about 5 minutes.
- Gradually pour the hot milk into the egg mixture while whisking to prevent scrambling.
- Return the mixture to the saucepan, whisk for 2–3 minutes until thickened.
- Remove from heat and stir in the dissolved gelatin until fully incorporated.
- Allow to cool for about 10 minutes, then fold in whipped heavy cream gently.
- Pour into molds or glasses and refrigerate for at least 6 hours or overnight.
- To serve, gently unmold and garnish with fresh berries.
