Ingredients
  

Dough
  • 500 g Strong White Bread Flour or gluten-free all-purpose blend
  • 75 g Caster Sugar granulated sugar works as well
  • 1 tsp Fine Sea Salt
  • 10 g Fast-Action Dried Yeast or fresh yeast with adjustments
  • 300 ml Whole Milk or almond/oat milk for dairy-free
  • 2 large Large Eggs or equivalent egg substitutes
  • 75 g Unsalted Butter or margarine for dairy-free
Filling
  • 250 g Full-Fat Cream Cheese low-fat alternatives may change texture
  • 200 g Raspberry Jam can swap for apricot or strawberry jam
Glaze and Topping
  • 2 tbsp Lemon Juice vinegar can substitute if needed
  • 1 tbsp Vanilla Bean Paste or vanilla extract
  • 150 g Icing Sugar or powdered granulated sugar
  • 1 tbsp Rose Water omit if unavailable
  • 2 tbsp Edible Dried Rose Petals or more pistachios for crunch
  • 50 g Chopped Shelled Pistachios can use other nuts/seeds

Method
 

Preparation
  1. In a stand mixer, combine strong white bread flour, caster sugar, fine sea salt, and fast-action dried yeast. Gradually pour in whole milk and crack two large eggs, mixing on low speed until combined. Knead for about 10 minutes until smooth and elastic.
  2. Transfer the kneaded dough to a greased bowl, cover with a towel, and refrigerate for 8 hours or overnight.
  3. Dust your countertop with flour, roll the dough into a rectangle, spread the cream cheese and raspberry jam, then roll tightly into a log and slice into 12 pieces.
  4. Grease a baking tin, place the sliced buns inside, cover, and let them rise for about 45 minutes to 1 hour.
  5. Preheat the oven to 190°C (375°F). Bake the buns for 30-35 minutes until golden brown and hollow when tapped.
  6. Prepare the glaze by whisking icing sugar, lemon juice, and rose water until smooth. Brush over the buns and sprinkle with rose petals and pistachios.
