Preparation
- In a stand mixer, combine strong white bread flour, caster sugar, fine sea salt, and fast-action dried yeast. Gradually pour in whole milk and crack two large eggs, mixing on low speed until combined. Knead for about 10 minutes until smooth and elastic.
- Transfer the kneaded dough to a greased bowl, cover with a towel, and refrigerate for 8 hours or overnight.
- Dust your countertop with flour, roll the dough into a rectangle, spread the cream cheese and raspberry jam, then roll tightly into a log and slice into 12 pieces.
- Grease a baking tin, place the sliced buns inside, cover, and let them rise for about 45 minutes to 1 hour.
- Preheat the oven to 190°C (375°F). Bake the buns for 30-35 minutes until golden brown and hollow when tapped.
- Prepare the glaze by whisking icing sugar, lemon juice, and rose water until smooth. Brush over the buns and sprinkle with rose petals and pistachios.
