Method
 

Step-by-Step Instructions
  1. Trim the tops and bottoms off the oranges to create a stable base. Remove the skins in long strips.
  2. Cut the peel into ¼ inch wide strips.
  3. Combine the orange peels, water, 1 cup of sugar, and salt in a saucepan over medium heat.
  4. Once simmering, reduce heat and cook for 20 minutes, stirring occasionally.
  5. Remove from heat, stir in vanilla extract, and let soak for 5-10 minutes.
  6. Transfer the soaked peels to a cooling rack to drain for at least 15 minutes.
  7. Toss drained peels in the remaining sugar until coated.
  8. Dry the sugar-coated peels on a cooling rack for about 30 minutes.
  9. Store in an airtight container in the refrigerator for up to 2 weeks.
