- Trim the tops and bottoms off the oranges to create a stable base. Remove the skins in long strips.
- Cut the peel into ¼ inch wide strips.
- Combine the orange peels, water, 1 cup of sugar, and salt in a saucepan over medium heat.
- Once simmering, reduce heat and cook for 20 minutes, stirring occasionally.
- Remove from heat, stir in vanilla extract, and let soak for 5-10 minutes.
- Transfer the soaked peels to a cooling rack to drain for at least 15 minutes.
- Toss drained peels in the remaining sugar until coated.
- Dry the sugar-coated peels on a cooling rack for about 30 minutes.
- Store in an airtight container in the refrigerator for up to 2 weeks.
