Method
 

Preparation
  1. Preheat your oven to 350°F (180°C). Spray a cookie sheet with cooking spray.
  2. In a medium saucepan, combine strawberries, lemon juice, and granulated sugar over medium-low heat. Cook for about 10 minutes until strawberries soften.
  3. Mix cornstarch with a small amount of cold water until smooth. Gradually add to the saucepan and stir until thickened, about 3-5 minutes. Remove from heat.
  4. Roll out the puff pastry on a sugar-dusted countertop, ensuring even thickness.
  5. Spread a thin layer of the strawberry mixture over the rolled pastry, reserving some for later serving.
  6. Roll each side of the pastry towards the center and wrap tightly in plastic wrap. Freeze for 30 minutes.
  7. Slice the rolled pastry into 1/2-inch thick pieces and place on the prepared cookie sheet.
  8. Bake for 25-30 minutes until golden brown. Let cool slightly before serving.
