Preparation
- Preheat your oven to 350°F (180°C). Spray a cookie sheet with cooking spray.
- In a medium saucepan, combine strawberries, lemon juice, and granulated sugar over medium-low heat. Cook for about 10 minutes until strawberries soften.
- Mix cornstarch with a small amount of cold water until smooth. Gradually add to the saucepan and stir until thickened, about 3-5 minutes. Remove from heat.
- Roll out the puff pastry on a sugar-dusted countertop, ensuring even thickness.
- Spread a thin layer of the strawberry mixture over the rolled pastry, reserving some for later serving.
- Roll each side of the pastry towards the center and wrap tightly in plastic wrap. Freeze for 30 minutes.
- Slice the rolled pastry into 1/2-inch thick pieces and place on the prepared cookie sheet.
- Bake for 25-30 minutes until golden brown. Let cool slightly before serving.
