Ingredients

Agua Fresca
  • 2 cups Dragonfruit fresh or frozen
  • 2 cups Cold Water
  • 1/4 cup Sweetener (Honey, Agave, or Sugar)
  • 1/4 cup Lime Juice freshly squeezed
Optional Garnishes
  • 1 bunch Mint Leaves
  • 1 whole Lime Slices

Equipment

  • blender
  • Fine mesh sieve
  • Pitcher
  • Spoon

Method

Preparation Steps
  1. Begin by cutting the dragonfruit in half lengthwise, and using a spoon, scoop out the vibrant pink flesh into a bowl. If you're using frozen dragonfruit, measure out two cups and let it sit for a few minutes to soften slightly.
  2. Pour the scooped dragonfruit flesh into a blender, adding in two cups of cold water, your preferred sweetener, and a generous squeeze of fresh lime juice. Blend on high for about 30 seconds or until the mixture is completely smooth and creamy.
  3. After blending, take a moment to taste your creation. Depending on your sweetness preference, add a little more sweetener if desired, or extra lime juice for added tartness. Blend for another 10 seconds to incorporate any adjustments.
  4. For a silky texture, place a fine mesh sieve over a pitcher and pour the blended mixture into it, gently using a spatula to help push the liquid through.
  5. Fill your favorite glasses with ice and pour the fresh Dragonfruit Agua Fresca over the ice. Garnish each glass with fresh lime slices and a few mint leaves.
