Preparation Steps
- Begin by cutting the dragonfruit in half lengthwise, and using a spoon, scoop out the vibrant pink flesh into a bowl. If you're using frozen dragonfruit, measure out two cups and let it sit for a few minutes to soften slightly.
- Pour the scooped dragonfruit flesh into a blender, adding in two cups of cold water, your preferred sweetener, and a generous squeeze of fresh lime juice. Blend on high for about 30 seconds or until the mixture is completely smooth and creamy.
- After blending, take a moment to taste your creation. Depending on your sweetness preference, add a little more sweetener if desired, or extra lime juice for added tartness. Blend for another 10 seconds to incorporate any adjustments.
- For a silky texture, place a fine mesh sieve over a pitcher and pour the blended mixture into it, gently using a spatula to help push the liquid through.
- Fill your favorite glasses with ice and pour the fresh Dragonfruit Agua Fresca over the ice. Garnish each glass with fresh lime slices and a few mint leaves.
