Method
 

Step-by-Step Instructions
  1. Peel the potatoes and slice them into thin, even rounds—aim for about 1/8 inch thick. Soak in cold water.
  2. Preheat oven to 350°F (175°C). Grease a medium-sized baking dish with butter.
  3. Layer half of the potato slices in the baking dish. Season with salt, pepper, and half of the cheddar. Pour half of the whipping cream over.
  4. Add the remaining potato slices, season again, top with the rest of the cheddar, and pour the remaining cream over.
  5. Cover with plastic wrap and chill for at least 4 hours or overnight.
  6. Bake uncovered for 45 to 60 minutes or until the top is golden brown and potatoes are tender.
  7. Let cool for about 10 minutes before serving.
