- Peel the potatoes and slice them into thin, even rounds—aim for about 1/8 inch thick. Soak in cold water.
- Preheat oven to 350°F (175°C). Grease a medium-sized baking dish with butter.
- Layer half of the potato slices in the baking dish. Season with salt, pepper, and half of the cheddar. Pour half of the whipping cream over.
- Add the remaining potato slices, season again, top with the rest of the cheddar, and pour the remaining cream over.
- Cover with plastic wrap and chill for at least 4 hours or overnight.
- Bake uncovered for 45 to 60 minutes or until the top is golden brown and potatoes are tender.
- Let cool for about 10 minutes before serving.
