  • 1 pound Lean Ground Turkey can substitute with lean ground beef
  • 1 teaspoon Salt adjust according to taste
  • 1 teaspoon Black Pepper freshly ground preferred
  • 1 teaspoon Chili Powder reduce for milder dish
  • 1 teaspoon Dried Oregano can swap with Italian seasoning
  • 1 teaspoon Paprika smoked paprika for deeper flavor
  • 3 cloves Garlic (minced) fresh garlic recommended
  • 2 tablespoons Olive or Avocado Oil any neutral oil works
  • 2 medium Zucchini can use yellow squash
  • 1 medium Bell Pepper any variety is fine
  • 1 medium Onion shallots can replace
  • 1 teaspoon Garlic Powder fresh preferred, dry ok
  • 1 teaspoon Onion Powder fresh preferred, dry ok
  • 1 teaspoon Dried Basil can be omitted
  • 1/2 cup Water or vegetable/chicken broth
  • 2 tablespoons Tomato Paste crushed tomatoes for chunkier texture
  • 2 cups Fresh Baby Spinach can swap with kale

Method
 

Step-by-Step Instructions
  1. Heat a large skillet over medium-high heat. Add the lean ground turkey, cooking for 5-7 minutes until browned. Sprinkle in salt, black pepper, chili powder, oregano, paprika, and minced garlic. Sauté for another minute until fragrant.
  2. Reduce heat to medium, add olive or avocado oil. Add zucchini, onion, and bell pepper. Season with salt, garlic powder, onion powder, dried oregano, dried basil, paprika, and black pepper. Cook for 5-10 minutes until vegetables are tender.
  3. Return the cooked turkey to the skillet. Stir in water and tomato paste, mix until evenly coated. Fold in baby spinach until wilted, about 2-3 minutes. Cover and let simmer for 5-10 minutes.
