- Begin by removing the frozen puff pastry from the freezer and placing it in the refrigerator to thaw overnight. If you're in a rush, leave it out at room temperature for about 30 minutes.
- In a mixing bowl, combine softened cream cheese with powdered sugar and a splash of vanilla extract. Beat until velvety smooth and well-combined, about 2-3 minutes.
- Lightly dust your work surface with flour, roll out the pastry to about 1/8-inch thick, and cut it into 9 equal squares.
- Place a small dollop of the cream cheese filling in the center of each pastry square. Top the filling with fresh raspberries.
- Place the assembled Raspberry Danishes on a baking sheet lined with parchment paper and freeze for at least 30 minutes.
- Preheat your oven to 400°F (200°C). Brush the top of each Danish with a beaten egg and bake for 25-30 minutes.
