  • 2 pounds boneless ham quarter ham or ham steaks
  • 1 cup sliced pineapple drained well
  • 1/2 cup honey adjust to taste
  • 1/4 cup brown sugar adjust to taste
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and spray a large, rimmed sheet pan with nonstick spray.
  2. Place the halved baby potatoes on one-third of the sheet pan, with the trimmed green beans adjacent. Drizzle with olive oil and sprinkle with minced garlic, thyme, onion powder, salt, and pepper. Toss to coat evenly.
  3. Arrange the boneless ham on the remaining third of the sheet pan. Add drained pineapple slices on top of the ham.
  4. In a small saucepan, combine honey, brown sugar, apple cider vinegar, and Dijon mustard. Heat until it simmers, then brush over the ham and pineapple.
  5. Bake in the preheated oven for 25-30 minutes, until the ham is heated through and potatoes are fork-tender.
  6. Allow to rest for a few minutes before serving. Plate and enjoy the festive meal!
