Preparation
  1. Preheat your oven to 350°F (175°C). Gather your ingredients.
  2. Combine graham cracker crumbs, melted butter, and sugar in a medium bowl. Press into the bottom of a 9-inch springform pan.
  3. Bake crust for 10 minutes, then cool completely.
  4. Beat softened cream cheese and sour cream until smooth. Gradually add sugar, then mix in eggs one at a time and stir in vanilla.
  5. Divide filling, fold green food coloring into one bowl. Swirl both fillings into the crust.
  6. Bake for 55 to 60 minutes until slightly jiggly. Cool in the oven for 30 minutes with door ajar.
  7. Cool at room temperature for 30 minutes, then refrigerate for at least 4 hours or overnight.
  8. Garnish with mint leaves or additional toppings, slice, and serve.
