Ingredients
  

For the Stew
  • 1 pound Top Sirloin or chuck roast for more tenderness
  • 2 cups Apple Cider can use unfiltered apple juice
  • 1 cup Beef Broth homemade recommended
  • 2 medium Carrots diced, substitute with parsnips if desired
  • 1 medium Onion chopped, yellow or sweet variety recommended
  • 2 tablespoons Olive Oil or vegetable oil/ghee
  • 1 tablespoon Butter
  • 2 tablespoons Flour can substitute with cornstarch or gluten-free flour
For the Mashed Potatoes
  • 2 pounds Potatoes Yukon Golds or Russets
  • ½ cup Milk or coconut milk for dairy-free option
  • ½ cup Sour Cream or plant-based yogurt
  • 1 cup Sharp Cheddar Cheese substitute with dairy-free if necessary
  • ¼ cup Chives or parsley for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients while the oven warms up.
  2. Heat olive oil and butter in a large pan over medium-high heat. Season sirloin cubes and sear until browned, about 6–8 minutes.
  3. Add the chopped onion and diced carrots. Cook for 4–5 minutes until vegetables are softened.
  4. Sprinkle flour over the mixture and stir for 1–2 minutes to coat everything evenly.
  5. Pour in apple cider and beef broth. Stir well and bring to a boil, then reduce to a simmer for 5–7 minutes.
  6. Transfer to the oven, cover, and bake for 1 to 1½ hours until the meat is tender.
  7. Bring a large pot of salted water to boil. Add peeled and chopped potatoes and cook until fork-tender, about 15 minutes.
  8. Drain the potatoes and return to the pot. Add milk, sour cream, cheddar cheese, and chives. Mash until creamy.
  9. Serve the stew over the creamy mashed potatoes, garnished with additional chives or cheddar cheese.
