Step-by-Step Instructions
  1. Melt 2 tablespoons of butter in a medium saucepan over medium heat. Add chopped apples, brown sugar, cinnamon, and water. Cook for 10 to 15 minutes until soft.
  2. Combine flour, baking powder, sugar, salt, and cinnamon in a large bowl. Whisk together.
  3. Whisk together egg yolk, vanilla, milk, and melted butter. Combine with dry ingredients until just mixed.
  4. Beat egg white until stiff peaks form. Gently fold into batter.
  5. Heat skillet, melt butter, and pour ¼ cup batter for each pancake. Cook until bubbles form, then flip and cook until golden brown.
  6. Stack pancakes and top with warm cinnamon apple compote. Drizzle with syrup if desired.
