For the Coleslaw
  • 1/2 head green or purple cabbage mix both for added color
  • 2 medium carrots grated
  • 1 handful fresh cilantro chopped
  • 2 stalks green onions chopped
For the Dressing
  • 1/2 cup mayonnaise or Greek yogurt for a lighter version
  • 2 tablespoons lime juice from fresh limes
  • 2 tablespoons apple cider vinegar
  • 1-2 teaspoons sugar adjust to taste
  • 1 teaspoon ground cumin
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 teaspoon chili powder optional, adjust for spice preference

Method
 

Preparation
  1. Shred cabbage, grate carrots, chop cilantro and green onions, and combine in a bowl.
  2. In a separate bowl, whisk mayonnaise, lime juice, apple cider vinegar, sugar, cumin, salt, and pepper until smooth.
  3. Pour dressing over vegetables and toss to coat well.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Before serving, give another toss, adjust seasoning as desired, and serve chilled.
