  1. Gather and prepare petals by collecting fresh dandelion petals, rinse under cold water, and aim for 2 cups.
  2. In a pot, combine petals with water, bring to boil for 5 minutes, then let simmer for 15 minutes.
  3. Steep the mixture for at least 3 hours or overnight.
  4. Strain the mixture using a fine mesh sieve or cheesecloth.
  5. Mix the strained dandelion liquid with lemon juice, honey (or maple syrup), pectin, and sugar in a clean pot.
  6. Raise heat to medium-high and boil, stirring for 1 to 2 minutes until bubbling.
