Preparation Steps
- Preheat oven to 190°C (375°F). Prepare a baking sheet lined with parchment paper or grease a loaf pan.
- In a large mixing bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, and spices. Mix gently until combined.
- Transfer the mixture to the prepared baking sheet or loaf pan and shape into a loaf about 1.5 inches thick.
- Bake in the preheated oven for 40-45 minutes or until the internal temperature reaches 74°C (165°F).
- In a saucepan, melt unsalted butter over medium heat. Sauté minced garlic until fragrant, then mix in additional Parmesan and parsley until the glaze thickens.
- Remove the meatloaf from the oven, brush with the glaze, and return to bake for an additional 5-7 minutes.
- Allow the meatloaf to rest for 5 minutes before slicing and garnish with fresh parsley.
